Iran produces over a dozen commercial pistachio varieties. Here's what separates the round Fandoghi from the jumbo Kalleh Ghouchi — and which one sells best in your market.

Iran is responsible for approximately 25–30% of global pistachio production, and within that output there is enormous variety. Understanding which variety suits your market is not an academic exercise — it directly determines your sell-through rate, your margins, and customer satisfaction.

The Iranian Pistachio Belt

Over 90% of Iranian pistachios are grown in Kerman province, though Yazd, Khorasan, and Semnan also contribute commercially. The climate — dry, high-altitude desert with cold winters and hot summers — is uniquely suited to pistachio cultivation. The trees require dry heat to ripen properly and cold winter dormancy to reset, conditions that are increasingly difficult to replicate elsewhere.

Fandoghi: The Export Workhorse

The most widely grown and exported Iranian pistachio. Round in shape, smaller than other commercial varieties, with a shell that opens naturally at a high rate (95%+). The name means "hazelnut" in Persian, which captures the shape well.

Typical size: 28/30 per ounce (oz) count — meaning 28–30 nuts per ounce, indicating a medium-small nut.

Best for: Retail snack bags, trail mix, baking ingredients, and price-sensitive markets. The best volume-to-value ratio in the Iranian pistachio range.

Akbari: The Premium Long

The longest pistachio variety grown commercially, sometimes exceeding 2.5cm in length. Distinctive elongated shape that stands out immediately in any retail display. Shell opening rate is lower than Fandoghi (80–90%), but the visual premium more than compensates.

Typical size: 18/20 per oz count — significantly larger than Fandoghi.

Best for: Premium gifting, luxury retail, gourmet food stores, and hotel buffets. Commands a price premium of 40–60% over Fandoghi. In German, Scandinavian, and GCC luxury retail, Akbari is the benchmark premium pistachio.

Kalleh Ghouchi: The Jumbo

"Kalleh Ghouchi" translates literally to "ram's head" — an apt description for the very large, wide nut with a distinctive crinkled shell. It is the largest Iranian commercial pistachio variety and has an intense, slightly sweet flavour profile that is distinct from the other varieties.

Typical size: 20/22 per oz count.

Best for: Gifting boxes, premium snack ranges, nut assortments, and any context where visual impact matters. Very popular in East Asian markets, particularly Japan and South Korea, where large nut size signals quality.

Ahmad Aghaei: The Rising Star

Increasingly popular in export markets. An elongated variety like Akbari but slightly shorter and with a more reliable shell-opening rate. Good flavour, attractive appearance, and more consistent sizing than Akbari. Many importers who wanted Akbari quality at a slightly more accessible price point have transitioned to Ahmad Aghaei.

Raw Pistachio Kernels: The Industrial Option

Shelled pistachio kernels (green kernels) are a significant export product for food manufacturing. Used in confectionery, ice cream, baklava, pesto alternatives, and cosmetics. Quality is graded by colour intensity (the greener the kernel, the higher the value) and moisture content.

Market Recommendations by Region

  • GCC: Akbari and Kalleh Ghouchi in gift packaging; Fandoghi for supermarket shelves
  • Europe: Fandoghi for private label and mass retail; Akbari for delicatessen and organic stores
  • East Asia: Kalleh Ghouchi strongly preferred; gift packaging with premium positioning
  • North America: Fandoghi competitive with California product on price; Akbari for premium positioning
  • Africa & CIS: Fandoghi dominates for price-to-value; Mamra almonds often co-sold
