Iran grows over 20 commercial date varieties, but two dominate the premium export market: Mazafati (known in some markets as Rotab) and Piarom (also called Maryami). They look different, taste different, pack differently, and appeal to entirely different customer profiles. Getting this wrong means either leaving margin on the table or stocking a product your customers won't reorder.
Mazafati Dates: The Fresh Premium
Grown primarily in Bam, Kerman province — an area so associated with this variety that Mazafati is sometimes simply called "Bam dates." They are a semi-dry date harvested at the Rotab (fresh-ripe) stage, which gives them their characteristic dark, almost black colour and extremely soft, moist texture.
Flavour Profile
Rich, deeply sweet with hints of caramel and chocolate. The texture is almost creamy — many customers describe it as "the medjool of Iran." Sugar content typically 65–72%, which is lower than fully dried varieties and contributes to a less intense sweetness than expected.
Shelf Life and Cold Chain Requirements
This is the critical commercial consideration. Mazafati must be stored at 0–4°C. At ambient temperature, shelf life is only 2–4 weeks. Refrigerated: 6–9 months. Frozen: up to 24 months. This means your supply chain must include cold storage at all stages — a meaningful investment that filters out budget importers and keeps margins healthy for those who commit.

Premium health food retailers, organic grocers, Middle Eastern specialty stores, and direct-to-consumer gifting. The product photographs exceptionally well, which makes it a natural for e-commerce and Instagram-driven food brands.
Piarom Dates: The Gourmet's Choice
Produced exclusively in Hajiabad, Hormozgan province. Piarom are a semi-dry variety with a distinctive elongated shape, thin skin that clings tightly to the flesh, and a rich brown-to-dark-mahogany colour. They are often called the "chocolate date" — a marketing descriptor that genuinely fits.
Flavour Profile
More complex than Mazafati. Toffee and caramel upfront, with a slight bitter-chocolate finish. Lower moisture content (about 15%) makes the texture firmer and chewier. Sugar content 65–70%, but the lower water content creates a more concentrated sweetness per bite.
Shelf Life — The Competitive Advantage
Because Piarom is semi-dry, it does not require the same cold chain. At ambient temperature (below 25°C): 12–15 months. Refrigerated: 24 months. This dramatically reduces logistics complexity, makes it suitable for ambient-temperature retail shelving, and opens markets where cold chain infrastructure is limited.
Best Markets for Piarom
Gourmet food retailers, chocolatiers (as a premium ingredient), gift packaging, specialty Middle Eastern food shops, and natural food stores in Europe and North America. The longer shelf life makes it the preferred choice for importers new to dates who want to minimise wastage risk.
