Cold-Chain Logistics for Saffron and Dates: Keeping Quality Intact

Cold-Chain Logistics for Saffron and Dates: Keeping Quality Intact

Temperature fluctuations can devastate delicate products like Mazafati dates and saffron. We outline the cold-chain protocols IRANCO uses from farm gate to your warehouse.

The journey from an Iranian farm to an importer's warehouse can take anywhere from 10 days (air freight) to 45 days (sea freight via intermediary). During that window, temperature excursions, humidity, and rough handling can irreversibly damage products that took months to grow and process. Here is exactly how IRANCO manages cold chain from farm gate to your facility.

Why Mazafati Dates Are the Most Demanding Product We Export

Mazafati dates are harvested at the Rotab (fresh-ripe) stage, which means they contain 20–25% moisture — significantly higher than fully dried dates. At temperatures above 8°C, fermentation begins within days. At temperatures above 15°C, visible mould can appear within 2–3 weeks.

This is not theoretical risk. It is the single most common cause of damage claims in the Iranian date export industry. Importers who do not understand and manage this risk end up with containers of unusable product.

IRANCO's Cold Chain Protocol for Mazafati

Stage 1: Farm to Packing House (0–24 hours post-harvest)

Dates are transported from Bam farms in refrigerated trucks (2–4°C) to our certified packing facility within 24 hours of harvest. Our packing facility operates at a constant 4°C.

Stage 2: Processing and Packaging

Sorting, grading, and packaging takes place in the controlled-temperature facility. We use modified atmosphere packaging (MAP) for premium grades — a nitrogen-flush process that removes oxygen and extends shelf life. Standard bulk cartons are lined with food-grade polyethylene and packed with absorbed moisture control sachets.

Stage 3: Pre-cooling Before Loading

All cartons are pre-cooled to 0–2°C before container loading. Containers are pre-cooled to the same temperature 2 hours before loading. This prevents the condensation that occurs when warm product meets a cold container.

Stage 4: Reefer Container Shipping

All sea freight shipments of Mazafati dates use 20ft or 40ft reefer (refrigerated) containers set to 0°C. We specify "constant temperature" — not "supply fresh air" — to prevent humidity spikes. For GCC destinations, transit typically 7–14 days. For Europe, 25–35 days.

Stage 5: Air Freight Option

For customers who prioritise freshness over cost, or for smaller orders, air freight is available. Product is packed in insulated cartons with gel packs for 24–48 hour transit. Temperature-logging data loggers are included in every air freight shipment on request.

Saffron: Different Challenges, Equally Important

Saffron does not require refrigeration — but it is extremely sensitive to light, moisture, and odour. IRANCO's saffron packaging protocol:

  • Inner packaging: sealed aluminium foil pouch with desiccant (silica gel) sachet
  • Secondary packaging: opaque, UV-blocking box
  • Outer carton: triple-wall, away from any odorous co-products
  • Humidity inside packaging maintained below 6% water activity

Documentation: Temperature Records Available on Request

For any reefer shipment, IRANCO can provide temperature download records from in-container data loggers, confirming that specified temperatures were maintained throughout transit. This is increasingly required by premium retailers and food safety auditors.
