In Tavazo's authentic Isfahan Loz formulation, clean sweet almonds and natural pistachios constitute at least 60% of the net weight. Absolutely no wheat flour, cornstarch, soy meal, or gelatinous binders are utilized. Texture cohesion relies strictly on dense nut lipids interlocking with micro-crystallized sugar syrup.

To inhibit syneresis (weeping) and hardening, sugar syrup solids are calibrated precisely to 82° Brix, with cold-compression shaping prior to cutting. Portions are vacuum-sealed inside ultra-low water vapor transmission rate (WVTR) multi-layer barrier trays, locking moisture equilibrium for 4 months.

Due to zero flour content and high natural almond/pistachio oil levels, exposure above 22°C softens the matrix, risking oil migration. The target transit range is 12–16°C. Shipments through high-ambient corridors require reefer containers equipped with real-time temperature loggers.

Tavazo’s plant Halal accreditation renews annually, with per-batch Lot Release letters for export consignments. FDA export health certificates are typically valid 90 days from issuance and can be re-issued per container with advance scheduling.
