FAQ
Bahari marmalades are formulated from homogenized, seed-screened fruit pulps stabilized with natural pectin. Unlike traditional jams with whole fruit suspended in liquid syrup, they feature a spreadable, coherent jelly texture ideal for rolling inside pastries, filling tart shells, or spreading onto breakfast toasts.
No animal gelatin is used; Bahari exclusively stabilizes its products with natural fruit and citrus pectin. Consequently, all marmalades are 100% plant-based, vegan-friendly, naturally halal, and free from bovine or porcine hydrocolloids.
Owing to a dense pectin matrix and high soluble solids (65%–68% Brix), these marmalades exhibit excellent bake stability. They resist boiling over, liquefaction, and scorched edges during cookie and tart baking up to 180°C.
The vivid hues and flavors derive primarily from genuine fruit pulp and natural citric balance. Bahari avoids harsh artificial colorants and chemical essences, relying on vacuum evaporation to preserve authentic fruit freshness.
Sealed jars remain stable at 15–25°C in cool, dark storage for 24 months. Once the vacuum seal is broken, the product must be refrigerated at 2–6°C and served with clean, dry utensils to avoid mold contamination.
The product range is packed in 300g and 320g clear retail glass jars with vacuum twist-off caps, alongside heavy-duty 10kg and 12kg food-grade plastic pails and commercial metal tins for industrial bakeries and catering.
By controlling the inversion ratio of sucrose into glucose and fructose during acidic vacuum boiling, and buffering pH between 3.0 and 3.3, sugar solubility equilibrium is preserved, stopping crystal nucleation.
