伊斯法罕是伊朗中部小麦、玉米湿法加工与活性谷朊粉的核心，为 Gaz、乳品、肉制品、卡尚纺织与纸板工业供货。Ji、 Najafabad、Shahinshahr 运行大规模三相离心与旋流分离线。
西部（Faridan）年产马铃薯逾50万吨，但块茎淀粉深加工仍依赖进口与哈马丹；东部以面向本地烘焙的分销为主。
酱料、乳品与工业面包线对改性、预胶化与抗性淀粉的需求，同时拉动本地工厂与木薯淀粉进口。

精炼与改性工艺
Azin、Ardineh 小麦采用三相离心（A淀粉、谷朊、B级）；Golshahd 玉米线包括亚硫酸盐浸泡与酶法糖浆转化。

面粉悬液分离为重淀粉相、湿谷朊与轻相。
