Private capital has favoured cold stores over evaporators; when fresh prices fall, stored fruit quickly becomes industrial feed while UF lines, aseptic fillers and bank collateral fail to fund plant upgrades versus newer Urmia or Turkish assets.
Hundreds of trucks of under-canopy apple leave Maragheh orchards daily at low farm-gate prices, registering concentrate value-added in neighbouring counties.
Shahd Sahand (Pani) is the legacy clear-concentrate anchor south of Lake Urmia; Negin Fam Tab’s 2,500 t/y aseptic puree line is the main in-county sink for industrial apple.
