Qom County sohan industry & mechanisation shift
Qom sohan is moving from shrine-district hand workshops to Shokoheh industrial plants with MAP lines and tinplate packs; estimated county capacity is near 50,000 tonnes per year.
Animal vs vegetable fat, SKU spread from pillow cuts to chocolate truffles, and pilgrim plus formal export channels define the three market pillars.

Metal packaging chain & MAP technology
Tinplate & lacquer
Food-grade lacquered tin enters multi-colour UV-resistant offset print.
Can forming
Seamless drawn cans shed heat from hot-sohan fill without crushing crisp texture.
Sohan cooking
Wheat-germ starch gelation, sucrose caramelisation, animal-fat emulsion.
MAP & nitrogen
Modified atmosphere in polymer liners slows lipid oxidation.
Dispatch & export
Transit wholesale, Mahtab rest stops, GCC & EU container lanes.
Foreign trade & export structure
Roughly 2% of output clears formal customs; 7–8% travels as pilgrim carry-on while the rest feeds domestic demand. Saedinia, Mortazavi and Ana run HACCP-backed cold chains to the GCC and EU.
| Indicator | Scale | Insight |
|---|---|---|
| County output capacity | ~50,000 t/year | ~90% domestic & pilgrim flow |
| National formal export | 1,050–1,080 t | HS 17049010 |
| USD value | USD 1.6–1.75 m | Saffron & tin pack sensitivity |
| Regional markets | UAE, Iraq, Oman | Gulf taste alignment |
| EU markets | Germany, UK | Diaspora specialty retail |
| Animal-fat shelf life | 60–90 days | N₂ flush & 18–22 °C chain |
Quality differentiation hinges on pure animal fat versus economy vegetable oils across all lines.
Short shelf life of animal-fat sohan without atmosphere control remains the main barrier to formal export scale-up.
