Continuous extrusion process
Isfahan plants rely on continuous extrusion with twin-stage mixing, optional pre-gelatinisation and multi-deck drying tunnels. Dough moisture and drying curves define eating quality and transport breakage resistance.
Dough preparation
Semolina or high-protein flour mixed with water, egg powder (premium grades) and salt under vacuum to 31–33% moisture.
Extrusion & forming
80–120 bar in twin-screw extruder; spaghetti or shaped dies; rotary cutters for short cuts.
Pre-drying & stabilisation
Pre-dryer sets surface skin to prevent clumping in the main tunnel.
Multi-stage drying
4–6 hour profile from 40→70°C with controlled RH until product moisture falls below 12%.
Cooling, QC & packing
