Hot Break
>90°C to inactivate pectinases; stable Brix and low Bostwick for ketchup and pasta sauce lines.
Cold Break
65–75°C to preserve lycopene and colour; preferred for bulk paste destined for re-dilution.
Concentration, sterilise & aseptic fill
Vacuum evaporators to 36–38 Brix; flash steriliser; 4-layer bag in 220 L drum — 24-month ambient shelf life.
